Health benefits of Peerkangai: 

Ridge gourd is anti-inflammatory agent which prevents disease in general, it helps to overcome from cardiovascular , strokes, cancer and liver diseases. It also helps in weight loss.

This recipe will help you or your family member to consume nutritious food even if you don't like vegetable such as peerkangai (ridge gourd). This chutney gives a rich, authentic hot and spicy delicious taste and can be served with idli, dosa.

Ingredients:
1. Peerkangai (Ridge gourd): 2-3 cup
2. Onion: 1 (Big size)
3. Tomato: 2 (Medium size) 
4. Red chilli: 7-8 nos. (long size)
5. Salt: As required (1/2 teaspoons)
6. Ginger: As required
7. Garlic cloves: 3-4 nos.
8. Jeera: 1/2 Teaspoon
9. Curry leaves:  7-8 leaves 
10. Mustard seeds:  1/2 Teaspoon
11. Vegetable Oil: 2-3 tablespoon [optional: You can use gingerly or coconut oil for more taste]

Steps to Procedure:
1. Chops the onion, tomato and peerkangai into smaller slices, Make sure you have all the ingredients in place as shown in picture,




2. Add 2 teaspoons of oil in a pan and heat it, add the sliced onion in the pan and saute it well. 

3. Add the tomato, Red chilli(s), Ginger, Garlic cloves, Jeera in the pan (cook with medium heat)stir the mixture for 2 minutes.

4. Add the peerkangai(Ridge gourd) in the pan, saute it well. Add 1 Teaspoon of salt. (This procedure will take upto 10-15 mins)

5. Heat the oil in a pan,add mustard seed and wait until the mustard seeds starts to  crackle and add curry leaves to it.  Add the seasoned oil in the prepared chutney.




Spicy Preekangai Chutney is ready to serve.
