home, but you should also make sure that you have ladle too to prepare boondi]
Ingredients:
To prepare sugar syrup
Sugar: 2 Cups
Water: 1 Cup
Cardamom: 7 to 10 Nos.
Crushed
Pachai karpuram (Camphor)
(Optional): A Pinch
To prepare boondi
Besan flour (Kadalai Maavu) :
500gms
Rice flour (Arisi Maavu): Small Cup
(50 - 100 gms)
Ghee: 2 to 3 Tablespoon
Milk/Water: As required making
consistency as batter
Lemon yellow color: A pinch
To Roast
Cashew nuts: 10 to 15 Nos
Raisins: 10 to 15 Nos
Ghee: 2 to 3 Table Spoon
Cloves (Optional): 3 to 5 Nos
Step by step procedure:
Mix the rice flour, besan powder and don't forget to add yellow color a pinch.
Add water or milk to the flour, say 2 cups
of flour add 1/3 cup of water/milk and start preparing the batter which shouldn't
be thick or thin, be careful to add water/milk in smaller quantities to reach the
consistency level as shown in the picture,
Now to prepare boondi heat the oil and pour the batter on the ladle, you can see the batter falling in the pan as tiny droplets, fry it till it 2-3 mins and keep it aside in a plate. you should also keep in mind that you should not fry it crispy (as Kara boondi).
Repeat this process for the rest of the batter,
Allow the boondi to cool down.
Meanwhile you can prepare the sugar
syrup and keep it ready.
Add 2 cup of sugar and 1 cup of water in a pan, boil it and stir continuously till you get the string consistency as shown in the picture,
Add the crushed cardamom and pinch of pachai karpuram(Camphor, Optional) to the sugar syrup.
Heat 2 -3 tablespoon of Ghee in a pan and roast the cashew nuts, raisins and cloves (optional) till it turns golden brown,
Mix the boondi, sugar syrup along with the crushed cardamom and the roasted cashew nuts, raisins.
Keep the mixture aside for 15 - 20 minutes, till the boondi(s) are well soaked in the sugar syrup and turns to be soft to make a ball out of boondi(s). Keep in mind that we shouldn't keep the soaked boondi's more than this time period as it might make the boondi dry and hard to make the round balls.
Make a ball out of boondi(s),
Yummy DELICIOUS LADOO(s) READY.
